Tomato and Sultana Chutney

Method

  1. Peel and cut tomatoes into small pieces.
  2. Add sugar, salt, chilli powder and ginger to the tomatoes.
  3. Cook all this in a covered pan on a very low heat.
  4. Stir the mixture well with a wooden spoon.
  5. When tomatoes are cooked to a semi-liquid stage, remove from heat and add the vinegar.
  6. Chill this mixture.
  7. Store in sterilised jars, but not in air-tight jars.
